The Best Blueberry Pie Bars
There is just something about blueberry pie that screams summer. The sweet berries, buttery crust, and the sweet aroma wafting through the kitchen. Honestly, we sometimes just need an easier version of blueberry pie. Blueberry pie bars!
These blueberry pie bars are one of my favorite blueberry recipes I’ve made yet! There is the perfect combination of buttery, crumbly, and sweetness that makes these blueberry bars taste just like the real thing. They’re so easy to make and are great to make for any occasion. Whether you’re going on a family picnic, looking for a tasty treat to bake on a rainy day, or sharing with friends at a get together. These blueberry bars won’t disappoint!

If I’m being honest, I wasn’t going to post this recipe on my blog today. I was going to make a blueberry iced latte except when I was just about ready to make it, I realized I didn’t have everything that I needed to make the latte. So instead of skipping out on a recipe today I decided to try out a batch of these blueberry bars. The latte will come to my blog next week!
These blueberry bars are the type of dessert that feel like home. They’re cozy and are the perfect mixture of sweet and tangy. A total crowd pleaser I must say!

I don’t know about you, but it definitely makes me feel a little bit better about indulging in dessert. LOL. Use fresh or frozen blueberries for this recipe. Ingredients for Blueberry Pie Bars
crust and crumble:
- Butter
- Brown Sugar

How to Make Blueberry Bars – Step by Step
This recipe doesn’t require any fancy equipment or skills. Here is a step by step guide on how exactly to make this recipe.
- Preheat oven: Preheat oven to 350℉ and spray a baking dish with cooking spray.
- Make the Crust and Crumble: In a large bowl melt the butter in the microwave until melted. Add the sugars and mix until combined. Add in the flour oats and vanilla and mix until everything is fully combined. The mixture will be dry with crumble pieces. Set 1 cup of the crust mixture aside. Move the remaining mixture to the baking dish and using your hands or a spatula hard pack the mixture to create a smooth and flat bottom layer. Place in the oven and bake for 10 minutes. Remove from the oven and set aside.
- Make the Filling: In a medium bowl combine the cream cheese, Greek yogurt, sugar egg and vanilla. Whisk until combined. Evenly pour the mixture of the crust layer and smooth it out with a spatula.
- Make the Blueberry Layer: Mix 1 tablespoon of corn starch with 1/4 cup of water. Set aside. In a medium saucepan over medium-high heat add the frozen blueberries, sugar, and vanilla. Give a stir and pour in the water and corn starch mixture. Bring to a boil while stirring constantly. After about a minute the blueberry mixture will have thickened up. Remove from heat. Pour the blueberry mixture over the top of the filling. Evenly sprinkle the remaining 1 cup of crust mixture over the top.
- Bake the Bars: Bake for about 40 minutes or until the top of the crumble is set and lightly golden brown. Let cool 1-2 hours before serving. If you cut in the bars before they are cool you will have very messy bars that will more than likely fall apart.
Storage Tips:
These blueberry bars will stay fresh for up to 5 days in the fridge. Making them a great make ahead treat for a picnic or a weekend snack. If you want to freeze these bars just wrap them tightly in plastic wrap and storge them in an airtight container for 2-3 months.

- 4 oz Cream Cheese
- 1/2 Cup Plain Greek Yogurt
- 1/4 Cup Granulated Sugar
- 1 Medium Egg
- 1 Teaspoon Vanilla
Blueberry Layer
- 2 Cups Frozen Blueberries
- 1/4 Cup Granulated Sugar
- 1 Tablespoon Lemon Juice
- 1/4 Cup Water
- 1 Tablespoon Corn Starch
