Easy Strawberry and Spinach Salad with Homemade Strawberry Vinaigrette

For the strawberry salad
- 5 oz baby spinach
- 5 oz baby romaine lettuce
- 1 cup sliced strawberries
- 1/2 cup chopped mint leaves
- 1/2 cup red onion sliced into long pieces
- 1/2 cup chopped pecans
- 1/2 cup feta or goat cheese
- salt and pepper to taste
For the strawberry vinaigrette
- 1 cup fresh or frozen strawberries
- 2 tablespoons honey
- 2 tablespoons lemon juice
- 2 tablespoons white cooking wine
- 1 teaspoon olive oil
- salt and pepper to taste

Rinse and drain your spinach and romaine lettuce and toss into a large glass bowl.
Cut the tops of your strawberries and slice them long wise. Thinly slice the red onion and chop the mint leaves.
Add in chopped mint leaves, pecans, sliced onions and strawberries, desired cheese, and salt and pepper to taste. Toss until well combined. Drizzle the homemade strawberry vinaigrette over the top of the salad.
Store in the refrigerator until ready to serve.
When ready to serve drizzle the homemade strawberry vinaigrette over the top of the salad.
