Creamy Chicken Pesto Pasta with Tomatoes

Ingredients
  

  • 12 oz Penne Pasta
  • 1 lb Chicken Breast
  • 1/2 Cup Half and Half
  • 1/4 Cup Parmesan Cheese
  • 6 oz Basil Pesto
  • 1/2 Cup Cherry Tomatoes
  • 3 Cloves Garlic Minced
  • 1 Tablespoon Olive Oil
  • 1/8 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1/2 Teaspoon Italian Seasoning

Instructions
 

  • Fill a large pot with water and 1/8 teaspoon salt. Bring to a boil.
  • Add the pasta and let cook for 7-9 minutes or until the pasta is al dente.
  • Strain the water from the pasta and rinse with cold water. Set aside.
  • Heat a large skillet over medium heat and once hot add one tablespoon olive oil.
  • Add the chicken and season with pepper and Italian season. Cook for 5-6 minutes or until the chicken is fully cooked. Reaching 165°. Remove the chicken from the pan and set aside.
  • Add the minced garlic to the same skillet and cook until fragrant. Cut the cherry tomatoes in half and add to the skillet cooking for 2-3 minutes.
  • Lower the temperature to low and stir in half and half, parmesan cheese, and basil pesto until fully combined.
  • Lastly add in cooked chicken and pasta and stir until the pasta and chicken are fully coated with the pesto sauce.
