Preheat oven to 425℉.
Thinly slice the potatoes and layer in a baking dish. Drizzle with olive oil and sprinkle with salt and pepper to taste. Bake for 20 minutes.
While the potatoes are cooking chop your onion and cook over medium heat until soft.
Add the ground beef in with the onion and cook until browned.
Once the potatoes have cooked for 20 minutes remove from the oven and set the oven to 400℉.
Layer the beef and onion mixture over the top and evenly spread out the cream of mushroom soup. Lastly sprinkle with shredded cheese.
Bake for 25 minutes or until the cheese is melted and bubbly.
Remove from oven, let cool, and enjoy!
