Pre heat your oven to 350 degrees. Mix all of your brownie ingredients together with a hand mixer. Pour into a 9 * 13 baking pan. Bake for 30 minutes or until you can pull a clean tooth pick out of the cake. Cool brownie layer.
Mix your mint ingredients together until fluffy. Spread unto your cooled brownie layer with a knife.
Melt the butter and chocolate chips on low heat and spread over mint layer. Chill for about 30 minutes or until hard and cut into small squares.
Notes
I always like to color my middle layer with green food coloring. It makes it so much more festive!
