This banana bread recipe is long overdue. It’s currently almost 1:00am as I’m writing this recipe out for you guys, and I can’t help but think why didn’t I do this earlier. The simple answer is that I didn’t have time. The weather was so nice today. And after making this banana bread we spent the rest of the day outside. Plus, having a toddler and baby I didn’t really have time during the day to get this done anyway. LOL. So, here I am getting this recipe out now.

Not having time during the day doesn’t really bother me. I can’t help but think that one day I’ll have all the time during the day to do whatever I want. So, I’m just soaking up every minute of being a mom that I can.

Anytime I go to throw the old bananas away on the counter my husband (Devin) always tells me I should be making banana bread with them. He’s always asking me to make banana bread, and I almost never do. This time when he asked, I delivered! Now my toddler wasn’t up for trying my banana bread, (he’s been in a picky mood lately) but I know he would’ve love it. Yes, he could try some tomorrow, but this banana bread more than likely won’t make it to tomorrow. LOL.

I love easy recipes that I can make. Especially recipes that my toddler can help me with. He absolutely loves baking with me. and I love that I’m able to include him so much. This banana bread literally took 10 minutes to mix up and less than an hour to bake in the oven. My toddler helped me mix everything up and then while the banana bread was baking in the oven we danced around the house, played on our balcony (it was so nice out today), all while the yummy aroma filled the air.

I’ve never been a big fan of banana bread until this recipe and now I feel like I could eat the whole loaf. My banana bread is super moist, packed with banana flavor, and filled with crunchy walnuts. It makes for a quick and yummy breakfast idea! Spread some butter on the bread for an even more rich and creamy taste!

Banana bread is always an easy recipe for me to make since most the time I always have all the ingredients in my pantry. My favorite kind of recipes! Another thing that makes this recipe even better is that you don’t need to use an electric mixer. Just use a few mixing bowls if you’d like. If you’re wanting to stick with a smoother consistency that’s when I would suggest using an electric mixer.

The key to making the best banana bread is using really ripe bananas. Not green or even yellow bananas. You basically want to use completely brown bananas. I’m telling you it’s the way to make banana bread taste so good.

Hard bananas or even yellow bananas are very starchy and don’t have a whole lot of flavor. Ripe bananas are much sweeter, and the banana flavor is more powerful making ripe bananas the best option when it comes to making banana bread.

  • Extra Ripe Bananas
  • Butter
  • Brown Sugar
  • Granulated Sugar
  • Eggs
  • Vanilla Extract
  • Milk
  • All-Purpose Flour
  • Baking Soda
  • Cinnamon
  • Salt
  • Walnuts

How to make the best walnut banana bread:

  1. Preheat the oven to 350℉ and line a loaf pan with parchment paper.
  2. In a bowl mash the bananas with a fork or potato masher.
  3. Using either a stand mixer or hand mixer cream together mashed bananas, melted butter, and eggs.
  4. Add in granulated sugar and brown sugar and beat until combined.
  5. Pour in the vanilla extract and milk. Mixing until well combined.
  6. In another bowl sift together flour, baking soda, cinnamon, and salt.
  7. Slowly add the dry ingredients to the wet ingredients and make sure not to over mix the batter.
  8. Stir in the walnuts using a spatula.
  9. Pour batter into prepared loaf pan.
  10. Bake for 55 minutes to an hour or until a toothpick comes out clean. Cover if the top of the banana bread is becoming too brown.
  11. Let the banana bread cool for 10 minutes before removing from the loaf pan.
  12. Slice and enjoy!

How to store banana bread

Storing banana bread correctly allows for longer freshness. Here are some tips on storing your banana bread.

  1. On the counter/ room temperature. (2-3 days)
  • Keep the bread in a cool and dry place and wrapped in plastic wrap or in an airtight container away from heat and sunlight.

2. In the refrigerator (10 days)

  • If you would like the banana bread to last a bit longer store it in the refrigerator in plastic wrap or an airtight container to hold moisture.

3. Freezing (3 months)

  • Wrap the entire loaf in plastic wrap and then in a freezer safe plastic bag. If you’d like to store the bread after it’s been sliced simply wrap the slices individually in plastic wrap and then in a freezer safe plastic bag.
