I’m not one to eat an oatmeal cookie that is packed with oats. I want to eat a cookie not granola. LOL. I’ve tested out this recipe and found the perfect amount of oats to use so that the cookies don’t have on overbearing amount. Using less oats is what makes them super chewy and fluffy on the inside. And that’s what we want!

I don’t know what it is about an old fashioned chocolate chip oatmeal cookie but they’re literally so yummy. Plus, I’ve been on a huge oatmeal kick lately. My toddler is obsessed with oatmeal just as much as I am and when he tasted these cookies for the first time he couldn’t get enough. LOL. He’s a cookie lover and these might just be his new favorite.

You’ll need 10 ingredients for these oatmeal cookies most of which you will have in your pantry. My favorite part about this recipe is that you don’t need any fancy hand mixers. You can simply use a big bowl to combine the ingredients with a spatula. This recipe makes 24 cookies.

- Chill the dough: You’ll want to chill your cookie dough for at least 30 minutes before you bake them. It will allow the cookies to get firm and makes the flavor even better! I suggest chilling for 2 hours before baking.

- Old fashioned oats
- Baking powder
- Salt
- Cinnamon

How To Make Chocolate Chip Oatmeal Cookies
- Pre heat oven to 350 ℉
- In a large glass bowl sift together dry ingredients. Set aside.
- In a large bowl, mix together soften butter, brown sugar, egg, and vanilla extract until well combined. The mixture should be light and fluffy.
- Add dry ingredients to wet ingredients folding in one cup at a time until well combined.
- Cover bowl and put in the refrigerator to chill for 30 minutes or up to 2 hours.
- Line a baking sheet with parchment paper and once the dough is done chilling scoop the dough evenly and 3 inches apart on the parchment paper.
- Bake for 12-14 minutes or just until the edges are lightly golden brown. Allow to cool on a cooling rack.
- Store in an airtight container for up to one week.

How To Store Oatmeal Cookies
I love eating my oatmeal cookies fresh and am able to store them for up to a week in an airtight container on the counter. However, they taste best if eaten within the first couple days. Oatmeal cookies can last 2 to two weeks in the fridge and up to 3 months in the freezer! I love the fact that these oatmeal cookies can be put in the freezer. Layer an airtight container with cookies separating each layer with parchment paper. Double or triple this recipe so you have extra dough to freeze.
Now you can easily pull out a container of cookies when you aren’t feeling like whipping up a batch. It makes things super simple and easy when you’re craving something sweet.
