Lasagna is one of my favorite foods so when I decided to try this new lasagna soup recipe, I knew I would love it. My husband was a little hesitant to try it, but I knew once he did, he would love it too! I’ve been wanting to share this crockpot recipe for a while but I haven’t had the time or the ingredients to make it.

Here is everything you need to make the best crockpot lasagna soup!

  • Italian sausage: Adds a touch of a sweet and savory flavor to this crockpot soup.
  • Marinara sauce: Marinara sauce is the perfect thing to make this crockpot lasagna soup taste like a homemade lasagna straight from the oven.
  • Chopped onion: Adding in just a little pit of onion adds a savory touch to this soup. I prefer using white onions for my soup. However, feel free to use your favorite type of onion for this recipe.
  • Tomato paste: The easiest way to help thicken up your soup. The more tomato paste you add the thicker the soup.
  • 32 oz chicken broth: Used for the base of the soup.
  • Garlic: Enhances the flavor.
  • Other seasoning: Italian seasoning, paprika, and garlic salt add the perfect amount of aroma and help enhance the flavor of the soup.
  • Heavy cream: Adds in extra richness making this soup extra creamy. Substitute with half and half for a healthier option.

  • Mozzarella cheese: Makes this soup recipe all the more ooey, gooey, and delicious.

This recipe literally tastes like you’re eating the most perfect homemade lasagna!

You can add any of your favorite seasonings that you think would taste good in this recipe. I wanted this lasagna soup to taste as similar to an oven baked lasagna as possible so that’s why I decided on the seasonings that I did.

How to make the best crockpot lasagna soup!

Cook your Italian sausage and chop your onion: Over medium heat fully cook your Italian sausage. Chop up your onion and set aside.

Add your ingredients to the crockpot: Turn your crockpot on high and add in your marinara sauce, fully cooked Italian sausage, and chopped onion. Next, you’re going to add your garlic cloves and seasonings. Lastly, you’ll pour in your chicken broth.

Cook: Stir to combine and let cook for 3 hours on high or 5 hours on low.

Add in remaining ingredients: After 3 hours you’ll want to pour in the heavy cream. Break your lasagna sheets into smaller pieces and add to the crockpot. Add in your mozzarella cheese and stir to combine.

Cook: Cover and cook for an additional 30 minutes until the lasagna noodles are fully cooked.

Make the ricotta topping: In a bowl mix together your ricotta cheese, parmesan cheese, and Italian seasoning until combined.

Add Ricotta topping: After 30 minutes dollop the ricotta topping over the top and cook until creamy.

Serve: Pour into bowls and serve with your favorite cheeses.

Some of my favorite cheeses I like to add to the top of my bowl are fresh mozzarella or fresh parmesan cheese, but if you’re looking for the quicker and cheaper option then prepackaged mozzarella (that you can shred yourself) and grated parmesan cheese will taste great too! Also, you can switch it up and use Mafalda noodles too. How fun would it be to use basically mini lasagna noodles!

Ingredients
  

Lasagna soup

  • 24 oz Jar Marinara sauce
  • 1 lb Italian sausage
  • 32 oz Chicken broth
  • 1/2 cup Onion Chopped
  • 3 Tbsp. Tomato paste
  • 4 Garlic cloves
  • 1 Tbsp. Italian seasoning
  • 1 Tbsp. Paprika Optional and added for spice
  • 1 Tbsp. Garlic powder
  • 1 Cup Heavy cream
  • 12 Lasanga sheets Broken up
  • 1 Cup Mozzarella cheese

Ricotta topping

  • 15 Oz Ricotta cheese
  • 4 Tbsp. Parmesan cheese
  • 1 Tbsp. Italian seasoning

Instructions
 

  • On medium heat cook your Italian sausage until fully cooked.
  • Turn your crockpot on high and pour in marinara sauce and fully cooked sausage.
  • Chop up your onion and add to the crockpot
  • Add your garlic cloves tomato paste and seasonings.
  • Pour in your chicken broth and stir to combine.
  • Cover and cook for 3 hours
  • break up lasagna sheets into small pieces and add to crockpot.
  • Pour in heavy cream and mozzarella cheese and stir to combine.
  • Cook for another 30 minutes until lasagna noodles are done.
  • Mix together ricotta cheese, Parmesan cheese and Italian seasoning until combined.
  • Dollop ricotta over the top and cover long enough for it to get creamy.
  • Pour into bowls and top with your favorite cheese.
