Christmas Time With My Family and My Mint Brownie Recipe

The whole week of Christmas was so busy I hardly had any time to think about how it’s all going to be over very soon. And now here we are 3 days after Christmas and its honestly kind of sad how fast it went by. I am trying to stay positive though and am very excited for the new year. This year has been an amazing year. I’ve been able to become a full time stay at home mom, we had our second son, and we’ve grown so much as a family. I’m so excited to share Christmas time with my family and my mint brownie recipe!

This year was so much different than last year mostly because we have a brand new baby! I was so excited to celebrate Christmas this year as a family of four! Christmas time is so magical to begin with, but being a mom during Christmas is so much better! I love being able to create such fun memories with my boys!

Christmas time with family has always super fun and exciting for me. When I was a kid, I always looked forward to spending time with all of my family. I especially loved baking though. One of my favorite things that me and my siters would bake with my mom would be 3 layer mint brownies. These have been my favorite brownies since I’ve tried them. My mom stopped making them a while back, and I didn’t want the tradition of making them every year to stop. That’s when I decided I would be the one to make them every year. And I haven’t missed one year since I started. I thought this would be a perfect recipe to share! Maybe it can be a tradition for you to start making it every Christmas time for your family.

Mint Brownie Ingredients:

Brownie layer:

  • 1 Cup Sugar
  • 1/2 Cup Butter
  • 1 Cup Flour
  • 4 Eggs
  • 1/2 Tsp. Salt
  • 16 oz. Chocolate Syrup

Mint Layer:

  • 4 Cups Powdered Sugar
  • 1 Cup Butter
  • 4 Tsp. Mint Flavoring

Chocolate Layer:

  • 1 Cup Butter
  • 2 Cups Semi-Sweet Chocolate Chips

How To Make the Mint Brownies:

  • Pre heat your oven to 350 degrees. Mix all of your brownie ingredients together with a hand mixer. Pour into a 9 * 13 baking pan. Bake for 30 minutes or until you can pull a clean tooth pick out of the cake. Cool brownie layer.
  • Mix your mint ingredients together until fluffy. Spread unto your cooled brownie layer with a knife.
  • Melt the butter and chocolate chips on low heat and spread over mint layer. Chill for about 30 minutes or until hard and cut into small squares.

Ingredients
  

Brownie layer

Notes

I always like to color my middle layer with green food coloring. It makes it so much more festive!

This year for Christmas like always we spent Christmas eve with my husband’s side of the family and Christmas day with my side of the family. We were able to spend our Christmas morning together as a family though, and we opened gifts with our toddler and newborn. Our toddler absolutely loved opening gifts this year. Last year he wasn’t very interested in opening gifts, so I was really happy he liked it so much this year.

Both our toddler and baby got so many fun gifts from my in laws! Our toddler got a rocking horse that he is absolutely obsessed with. Our baby is still so little, so he wasn’t interested in much, but he sure loved all the fun Christmas lights this year! I’m definitely loving all the baby time this Christmas!

But seriously how cute is he?! Since we have a baby and toddler this year, I was expecting Christmas time to be really stressful and hard, but it really wasn’t very much at all. I absolutely love being a family of four!

We all matched our outfits on Christmas eve! This is something we try to do every year and it’s super fun! Me and my husband wore matching sweaters, and our toddler and baby wore a matching outfit! They all had to do with gingerbread men though, so we all matched as a family!

Christmas eve my in laws came over to our apartment to spend the afternoon with us and open gifts. Every other year we’ve always gone to their house, so it was nice being able to stay home and have them come to us this year. We spent a couple hours just talking and catching up and opened gifts! I sure was happy our toddler was able to nap before everyone showed up though!

Since I’ve been with my husband every Christmas his side of the family hosts a family Christmas party. I always look forward to the annual Christmas party! Everyone brings a dish (we brought the mint brownies I made), we have Santa gifts for the kids, and we always play the saran wrap ball game.

Since becoming a mom, the annual Christmas party is so much more fun. I love being able to bring gifts for our boys and I love seeing how much fun our toddler has.

This year I did a lot of running around with my toddler while caring our baby around, and I absolutely loved it. I love being a mom and everything that comes with it. One thing I will say is having a baby carrier helps so much when you also have a toddler. I’ve absolutely loved the mom cozy and Moby carriers. They work so well for me and are so comfortable!

We spent most of our night at the Christmas party on Christmas eve and we got home shortly before bedtime for our toddler. When we did get home, we made chocolate chip cookies for Santa and read our boys a Christmas book. And off to bed for them so Santa could come! I was able to get to bed by midnight after finishing up the stockings and putting out the Christmas gifts.

I made sure to wrap all the Christmas gifts the weekend before Christmas because I knew if I didn’t, I wouldn’t have had time to during the week. Let me tell you I am so glad I did.

I was so excited for our toddler and baby to wake up, but of course our toddler slept in until 9am. While everyone was still sleeping, I was able to make coffee and get everything including myself ready to go. We had to be to my parents house for Christmas around 11. So that meant that we needed to be ready and have gifts opened by 10:15 and out the door by 10:30. Which we did manage to do. I’m telling you with 2 under 2 it can be tough to get out the door sometimes! Thankfully I had my husbands help. Everyone except me went in matching pjs. I wore a set my mother in law got me for Christmas because my matching set unfortunately shrunk. No more washing all our clothes in hot water anymore, I guess.

We spent all day at my parents house. We had breakfast there. Homemade cinnamon rolls and eggs mixed with sausage, bacon, and cheese. It was super yummy! My toddler loved breakfast. It’s his favorite meal of the day and the meal he always eats the most of. He of course had a banana when he woke up and before we left because he’s so hungry when he wakes up.

We opened gifts with my sisters and their families and our parents. Our boys are so lucky and got everything they could want! Our toddler got a real working vacuum toy. He absolutely loves it! Him and one of his cousins played all day with it. Our baby got a kick n play, and my husband got a bunch of stuff for his gaming room. I got a walking pad that actually can go up to the speed of 6.2. I’m so excited and thankful for it. I love running and since having our second baby it’s been really hard to get out and run. It makes it so much easier since I’m able to stay inside and run.

After opening gifts our toddler had to take a nap. My husband also napped with him and they napped for 3 hours! They didn’t wake up until 5pm. I knew that meant it was going to be a late night for my toddler. That’s okay though all that mattered to me is that my toddler got the nap he needed. We had a long couple of days.

When they were napping, I talked and caught up with everyone. It was so nice seeing everyone and being able to catch up and spend time together. We had dinner and my husband packed up all of our stuff and we left around 9pm.

Once we were home me and my husband played a little bit with my toddler before getting him ready for bed. He had so much fun playing with all of his new toys, and so did I! Once our toddler was down me and my husband spend some time together and looked at all the gifts we got. We both are so thankful for everything both our families got for us this year. I love that we’re able to spend Christmas time with both sides of our family.
