I was never a really big zucchini fan until I met my husband. He would always mention how much he loved eating zucchini, and I always told him I didn’t like it. Really, I never even remembered trying zucchini as a kid. So, one day we made it with dinner and after that I was obsessed. These stuffed zucchini boats are definitely one of my favorite healthy dinner ideas. They’re so easy to make and I’m telling you they’re SO GOOD! Now I just have to get my toddler to try zucchini. My toddler is a huge veggie fan but when it comes to zucchini, he never wants to eat it. LOL.

This recipe calls for simple ingredients. Most ingredients you’ll already have at home and if you don’t you won’t have to run around the store trying to find all the ingredients. They’re simple and easy to find. I’m keeping this recipe easy!

  • Gluten Free Breadcrumbs (I used Italian Style Breadcrumbs)

How to Make Chicken Stuffed Zucchini Boats

These zucchini boats are super simple to make. Prep in just 15 minutes and cook in 20-25 minutes. Dinner will be ready in just about 40 minutes. Easy and delicious!

  1. Preheat oven to 400℉ and layer a baking dish with 1/2 cup marinara sauce. Set aside for later.
  2. Cut zucchini in half lengthwise and scoop out the flesh and seeds using a spoon or a fruit scoop. Place them on the baking dish and sprinkle zucchini halves with salt, pepper, and Italian seasoning. Set aside. Chop the zucchini flesh and set aside for later use.
  3. Heat olive oil over medium heat and cook cubed chicken until cooked all the way through and tender. Season with garlic powder.
  4. Over low heat, mix in chopped zucchini, marinara sauce, breadcrumbs, and parmesan cheese. Let cook until the mixture is thickened. Add in salt and pepper to taste. Remove mixture from heat.
  5. Evenly distribute the mixture into the zucchini halves and sprinkle with mozzarella cheese.
  6. Cook for 20-25 minutes. The zucchini should be tender, and the cheese will be melted.

  • Don’t Scoop the Zucchini Too Hard: When scooping the flesh of the zucchini make sure you aren’t scooping too hard. You’ll want to carefully scoop out the inside to avoid damaging the outside of the zucchini. Leaving you with perfect looking zucchini boats.

I will definitely be making these stuffed zucchini boats more often. They’re literally so good and keep me full for HOURS! I always find it hard to find meals that keep me full for a long time. Since I exclusively breastfeed my baby, I feel like I’m constantly hungry. LOL. I made dinner at about 5:30 and it’s now 10:00pm and I’m still pretty full. That’s a win for me!
