Birthday Baking, New Recipes, Toddler Turning Two, & February Weather

With my toddler turning two this past week and all the new recipes I’ve been making things have for sure been busy. And with this February weather these past couple of days being AMAZING I feel like things have been nonstop for me.

When I first moved to Wisconsion I told myself that I wasn’t going to be the person who said 45 degrees was warm weather. I can finally say that I am that person now. LOL. When you get weeks of negative windchills 45 degrees definitely feels like a heatwave to say the least.

This February weather has been something else this year. The beginning of the month we were having pretty cold temperatures and then boom just like that the temperatures went into the mid-forties. And guess what we are supposed to get snow tonight! LOL.

I’m just hopeful that since we’ve already gotten some warmer weather that spring will be here shortly. This year’s winter has been a cold one and I can say that I most definitely will not being missing it.

Although we try and get out as much as possible during the winter these past couple weeks we haven’t been outside as much. So, when this warm February weather hit you bet, we were outside as much as possible. My toddler loves being outside and let me tell you he’s so much happier when he gets to play outside. He also sleeps so great.

When these random warm days hit I always question why I’m living in Wisconsin. LOL. Wisconsin literally doesn’t have what I want at all when it comes to the weather. Winter lasts super long here. I absolutely love the summer and fall time, and although I do love the seasons, I really don’t like the freezing cold. If winter could just be cut in half that’d be great. LOL.

It makes me wonder if I really want to stay living in Wisconsion my entire life. There are honestly so many things that play into it though. I really don’t want to leave my family and moving is a lot of work. Especially moving to another state. I’ve done it before and I’m not sure I want to do it again. Again, I just wish winter could get cut in half. The weather would be great then!

I’ve been trying out some new recipes and that got me thinking that I really want to eat cleaner and try making recipes that incorporate that. Before becoming a mom, I definitely wanted to stay healthy with exercise and healthy meals, but it wasn’t until I become a mom that I’ve really wanted to stick true to my word of staying healthy.

By eating clean I don’t mean eating and exercising perfectly. I really mostly want to cut out processed foods. I’ve recently noticed how much certain foods especially processed foods affect how I feel, bloating, etc. My moods are totally different when I eat a ton of processed foods, and I can definitely tell that I’m way more tired when I’m eating more processed foods than whole foods.

Honestly, I would love to only eat clean and whole foods all the time (aside from a treat every now and then). However, it gets so expensive, and as of recently we’ve been on a strict budget.

That’s why I decided I’m going to start incorporating it slowly. That way it won’t drastically change our grocery bill. Things will change slowly, and we can adjust our budget accordingly.

I’ve always struggled with my eating and exercising habits, and I don’t want my old habits to affect the habits of my children. That’s why I think it’s so important for me to stick to my word with being healthy. The things I do now will help shape the things my little boys do in the future.

Honestly that’s crazy to say. That I have someone’s future in my hands.

But with that being said I’m going to be trying to post more healthy and clean recipes. Of course, eating healthy can sometimes be harder because of the cost of things and the time it takes, but I will definitely be trying me best to incorporate more clean and healthy meals in my days.

My toddler turned two this past week! I literally cried. How is he getting so big so fast. I want the time to slow down. His little brother is growing so fast too, and I really just want things to slow down a little bit.

Don’t get me wrong I love seeing the new stages. I just really didn’t expect things to fly by so fast. I feel like it was just yesterday that we celebrated him turning one. Time literally flies by. The older I get the faster it goes.

You really don’t think birthdays are that important until you have kids of your own. Birthdays are so much more special to me now than they were when I was a kid. Of course, I loved my birthdays as a kid, but they didn’t feel as important as they do now.

We had two birthday celebrations for my toddler. One on his birthday at our apartment and the other with all of our family at a fun children’s play museum. I would’ve totally been okay just celebrating at our place however my husband really loves celebrating with our whole family, and I really wanted to have a little celebration for him on his actual birthday at our place. LOL. So, we decided it was best to do both. We are so lucky that we had the opportunity to do so much for our little guy’s birthday!

My toddler is obsessed with airplanes, so we did an airplane themed birthday party. He loved the fun decorations and had a blast opening up his gifts, eating cake, and spending time with all of our family. He definitely had a great birthday filled with so much fun, laughs, and family. The best way any birthday can be spent!

I wanted to make my son’s birthday cake this year along with cupcakes and airplane royal icing sugar cookies. And I was all for it until the time came to make everything. I’m always do things last minute, and I’m never prepared. I think things will take way less time than is actually required. LOL.

Like always I decided to make everything last minute. The night before his birthday party. LOL. I definitely didn’t want to make anything the night of but I’m super happy that I followed through. I loved the way everything turned out. Plus, I’m not sure I could’ve gotten a customized cake the way I wanted that last minute.

I made a basic vanilla cake with buttercream frosting and did the same thing for the cupcakes. I’m not a huge fan of this vanilla cake recipe that I make. Its super dense and doesn’t have a ton of flavor. I’m working on perfecting the ingredients to change that though.

Now for the royal icing sugar cookies… I love making these cookies. If someone requests them for a birthday, holiday, or any special occasion, you bet I will be making them. I used to do craft shows specifically for selling these cookies however after I had my first baby, I didn’t really have the time for them anymore. Which wasn’t a huge deal for me because I could still make them for birthdays, and holidays.

I didn’t use to like royal icing sugar cookies because the cookies were always super crisp and crunchy. I’m a fan of moist and soft sugar cookies. I have worked really hard on my sugar cookie recipe and royal icing recipe, and I absolutely love these cookies now.

I love making things for birthday parties however I need to plan better. Not do everything last minute. LOL. Especially the night of. Next time I will be more prepared and plan accordingly!

My favorite thing about making cakes and cookies for birthday parties is being able to decorate them to match the theme. It’s super fun deciding how you want everything to look and it’s even more fun decorating everything.

Although this past week was super busy, and the time flew by it sure was a memorable week and I loved being be able to celebrate my toddlers second birthday with him.
