  • Tortillas: I usually use storebought flour tortillas however you can use corn tortillas to.
  • Chicken: I typically cook my chicken and shred it with a hand mixer however if you’re looking for a faster way you could always buy pre shredded chicken or also use chicken from a rotisserie chicken. Since it’s already cooked, you’d just have to shred it yourself.
  • Sour cream: The sour cream in this recipe is a big must. It’s what makes the enchiladas extra creamy.
  • Seasonings: For the classic Mexican flavor using taco seasoning does the trick. Adding in a bit of Cajun seasoning adds just the right amount of spice that you’re looking for. If you don’t prefer spicy than take out the Cajun seasoning.
  • Shredded cheese: I’m always mixing up the type of cheese I use however my favorite is the pre shredded Mexican style cheese you can buy at most grocery stores. Some other good options are cheddar or mozzarella. Mixing a couple different cheese would taste great too.
  • Enchilada sauce: Enchilada sauce is what puts these chicken enchiladas together. If you can use homemade enchilada sauce your enchiladas will taste even better.

Here are the steps to make these yummy chicken enchiladas.

  • Preheat oven to 350°F
  • In a large baking dish pour about ½ cup of enchilada sauce to cover the bottom. Set aside.
  • In a large bowl combine shredded chicken, sour cream, taco seasoning, Cajun seasoning, and 1 cup shredded cheese. Mix until well combined.
  • Put your tortillas on a plate and microwave for 1 minute flipping when halfway through until they are warm.
  • Assemble the enchiladas by filling them evenly with the shredded chicken mixture. Roll the tortillas tightly and put seem down in the prepared baking dish.
  • Pour the remaining 1 ½ cup enchilada sauce over the top of the tortilla shells along with the remaining 1 ½ cup shredded cheese and bake for 20 minutes until the cheese is fully melted and crispy.
