These almond flour muffins are so incredibly yummy! I wasn’t sure about making them because I’ve never made gluten free muffins before. Boy, was I missing out. I never realized how good gluten free muffins could be. These muffins are super easy to make and come together in just 30 minutes. My favorite part about making these muffins is that you don’t need to use any electric mixers if you don’t want to. My whole family is obsessed!

These almond flour muffins will definitely be a new weekly breakfast in my family. My toddler is obsessed with them. He scarfed down one muffin and immediately asked for a second. I’m so happy he likes them as much as me. Making healthier meals for my family is something I love doing so the fact that my family loves these muffins is a huge plus!

I’m always testing out my recipes and trying new things if I don’t like how something turned out, but that wasn’t the case for this recipe. I knew once I tried them that I loved them. Of course, since this was my first gluten free recipe, I’m sure I’ll find the flaws later on and tweak this muffin recipe. However, right now this muffin recipe is literally made to perfection.

These chocolate chip almond flour muffins are literally so yummy! They make for a healthy and dreamy toddler breakfast that your toddler will absolutely devour. These muffins also make for a great healthy dessert idea. They’re moist and super chocolaty. No matter who you are baking these delicious and healthy muffins for they will surely be a tasty treat.

The best part about making these muffins is that you don’t need any fancy equipment to make them. You simply just need a bowl and a fork. I however, like using a whisk to mix the ingredients. It’s really not needed though. Super simple and easy!

Cooking With Almond Flour

It’s important to know that cooking with almond flour is much different than cooking with basic all-purpose flour. It requires a different ratio, and liquids need to be increased. Almond flour also has a different texture and is a little bit drier. That doesn’t make almond flour a bad ingredient or mean these muffins will be dry. You will have super moist and delicious muffins despite using almond flour!

Easy Almond Flour Muffin Variations

You can easily change up the flavors in these muffins! Here are some great options!

  • Almond – Use almond extract instead of vanilla extract.
  • Orange – Use orange extract instead of vanilla extract.
  • Lemon – Use lemon extract instead of vanilla extract.

Use the zest of an orange and lemon to create an even more intense flavor in the muffins.

Chocolate Chip Almond Flour Muffin Ingredients

  • 2 ½ cups almond flour: Make sure you’re using almond flour and not almond meal. The texture won’t be the same.
  • ½ monk fruit: I use monk fruit, but you can also use coconut sugar or Sucanat.
  • ¼ tsp salt: I like to add salt to most my recipes. It makes everything taste so much better.
  • 1 tbsp baking powder: Always use fresh baking powder.
  • 2 tbsp vanilla extract: Do not use vanilla flavoring. Vanilla extract is made with real ingredients unlike vanilla flavoring.
  • 1 tbsp olive oil: Butter is a great option to substitute the olive oil with. Both options help make these muffins even more moist.
  • 1 tbsp honey: Adding in a little extra sweetness and creating a slight but delicious browned muffin top.
  • 2 eggs: Use room temperature eggs.
  • 1 cup skim milk: I used skim milk for my muffins, but you really can use any milk you prefer. However, if using almond milk use unsweetened.
  • ½ no-sugar-added chocolate chips: I used Lilly’s brand. (which is my favorite). And I used semi sweet mini chocolate chips for this muffin recipe. Some other no-sugar-added chocolate chip brands are bake believe, swerve, and lakanto. Use whatever brand you like best!

Instructions for Almond Flour Muffins

  1. Pre heat your oven to 350℉. Line your muffin with liners or spay with preferred cooking spray
  2. Combine the almond flour, monk fruit, baking powder, and salt and mix until combined using a whisk or fork. Set aside.
  3. Add the eggs, vanilla extract, olive oil, honey, and skim milk to the dry ingredients that were set aside. Mix until well combined. Be careful not to over mix.
  4. Fill muffin liners until about ¾ full. Place the muffins in the preheated oven and bake for 25-28 minutes depending on the size of your muffins. When a toothpick comes out clean, they’re ready to be taken out!
  5. Let muffins cool in the pan for a few minutes and then transfer to a cooling rack to fully cool. Best if served warm but can also be served at room temperature.

Don’t over fill the muffin liners. ¾ full is plenty full. You don’t want your batter to overflow out the sides. If the liners are overfilled the batter could also not rise correctly.
