Expert Tips

  1. Don’t substitute the Cottage Cheese in This Recipe. Cottage cheese is the key to making these egg bites super delicious and fluffy. The cottage cheese also adds in extra protein. You don’t want to leave the cottage cheese out of these egg bites.
  2. Don’t Over Cook The Eggs: You’ll want to take the egg bites out of the oven as soon as the eggs are firm and the egg bites are just golden brown. Mine were out of the oven right at 20 minutes.
  3. Don’t Over Fill Muffin Pan: You want to make sure you don’t over fill your muffin pan. Filling just over halfway (about 3/4 full) is the perfect amount. The eggs will rise when they cook and you don’t want them to overflow.
